🍽️ Recipe of the week
Recipe: HIDDEN VEG CURRY
🧅 1x onion, diced
🧄 2x garlic
🫚 0.5 tsp ginger
🌶️ 1 tbsp curry powder
🌶️ 2 tsp garam masala
🥕 1x large carrot
🥒 1x small courgette
🥦 200g cauliflower
🫑 0.5 red pepper
🍅 1x tin chopped tomatoes
🥥 1x tin coconut milk
🥕 150ml vegetable stock
Instructions:
Fry your ginger, garlic and onion for 2 mins, before adding your spices for a further minute. Add your diced vegetables and soften before adding your coconut milk, chopped tomatoes, stock and boiling for 20 mins. Blitz until smooth.
